Food & Beverage Manager

 

Summary:
Responsible for the successful overall coordination, administration and direction of all Food and Beverage activities on property, in alignment with the Mission and Objectives of the Company and in full accordance with all Operational Policies and Procedures, Gaming Regulations and Alcohol Beverage Control.
 
Job Purpose:
Manager is responsible efficiently staffing employees to casino guest demand, while maximizing profits and maintaining great food and beverage selections to South Wind Casino guests with the highest possible quality control standards.
 
Education:
Must have a high school diploma or G.E.D. and some culinary training. An Associates Degree or Post-Secondary coursework in Culinary Arts or Business with Hospitality emphasis in field is preferred.
 
Requirements:
Responsible for assisting the General Manager in creating, developing and implementing an effective strategy of organization within the Food & Beverage Department, setting objectives for future growth and expansion. Must be able to pass extensive background check, in accordance with Kaw Nation Gaming Commission regulations to obtain gaming license. Frequent lifting, may occasionally be required to lift in excess of 50 pounds. Requires being able to sit/stand for extended periods of time and have visual dexterity suitable to read small print on reports and invoices. Must be proficient in MS Word, Excel and have worked within a requisition, purchase order, approved vendor setting previously. Strong analytical and problem solving skills required. Superior verbal/written skills and presentation skills will be needed to fully perform job function. Good punctuation, spelling, grammar and attention to detail a must. Must be self motivated able to work independently. Must be able to provide direction well to subordinates and work within a strenuous high volume atmosphere.
 
Essential Job Functions and Responsibilities:
  • Formulates, administers and enforces departmental policies and performance standards.
  • Participates in setting marketing policies and goals designed to attract customers.
  • Ensures departmental compliance with applicable Federal and State laws governing food and beverage to include alcohol service.
  • Confers with General Manager and Human Resources, to review property wide and departmental Employee concerns, discussing needed changes and potential solutions.
  • Coordinates all activities with Human Resources relating to recruitment, interviewing, testing, selection, orientation, transfers, promotions, and terminations, to ensure that they are carried out in accordance with established company policies and procedures.
  • Maintains appropriate staffing levels in the Food and Beverage Department, by interviewing, selecting, training, scheduling, evaluating, promoting, assisting with career development, disciplining and terminating Employees, as needed.
  • Responsible for conducting staff meetings with Property Management Team ensuring all company policies and procedures are communicated properly to all employees.
  • Participates in special projects as requested by the General Manager.
  • Ensures the quality of management operations in the Café, SouthWind Roost and the Bar/Lounge.
  • Establishes performance and profit objectives for short-term and long-term goals.
  • Reviews departmental reports, addressing potential conflicts.
  • Ensures a maximum level of service and satisfaction throughout the property, in the areas of Food and Beverage, is achieved and maintained.
  • Held accountable, to the highest degree, for the accuracy and thoroughness of departmental records, reports, and ABLE and Kaw Nation alcohol regulations.
•     Greets guests in friendly, courteous and professional manner.
•     Monitors customer transactions.
•     Motivates and manages Food & Beverage departmental staff.
·         Reports irregularities to General Manager.
•     Implementing the protection and loss prevention philosophies of the General Manager. 
•     Establishes and ensures internal control procedures and structures to safeguard company assets.
•     Maintains a professional work environment with customers and vendors.
  • Ability to write routine correspondence and to speak effectively to the public, employees and
    customers.
  • Must have the ability to resolve problems/conflicts in a diplomatic and tactful manner.
  • Must be able to tolerate areas containing secondary smoke, high noise levels, bright lights and dust.
  • Meets the attendance guidelines of the job and adheres to regulatory, departmental and
    company policies.
  • Attend all meetings when requested.
  • Assist in other duties and projects as assigned.
  • Duties, responsibilities, requirements and expectations pertaining to this job are subject to change as needed. Hours are determined by 24-hour schedule.
  • Maintain physical stamina and proper mental attitude to work under pressure in a fast-paced,
    casino environment and effectively deal with customers, management, employees, and members of the business community in all situations.
  • Position may require working nights, weekends and holidays as required and is contingent upon a favorable outcome of a background investigation and drug screening.
